Ponnukokur Recipe

I'm lucky enough to have a ponnukokur pan from Iceland, but apparently you can make these on other fry pans.  :)

Ponnukokur (Icelandic Pancakes)

2 eggs
1/3 cup granulated sugar (sorry, Gary!)
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla
1/2 tsp baking soda
1 cup whipping cream
1 1/2 cups milk
1 1/2 cups flour
1 tsp baking powder

Beat eggs.  Add sugar, salt, vanilla and cinnamon.  In a separate bowl, combine milk and whipping cream.  Dissolve baking soda in a little bit of boiling water and add to milk.  Sift flour and baking powder together and add to egg mixture alternately with milk.  Stir well!

To fry, use a fairly heavy griddle pan.  Rub bottom of pan with butter tied in a small cloth.  Lift the pan while you pour about 1/4 cup of batter.  Tip the pan around to spread batter out thinly.  Set back on heat as quickly as possible.  Turn and fry on other side.  Sprinkle with brown sugar and stack.  When you are done frying, sprinkle a bit more brown sugar on each ponnukokur and roll up separately. Cut in half and serve.
