Angie - Blackberry Salad with Creamy Feta


Here is the recipe for a blueberry salad that I am bringing for snack tomorrow.
Thought I would send it to you so you could post it - allergies and if people want to make it again!

Blueberry (Blackberry) Salad With Creamy Feta

1 recipe for Quick Pickled Onions (below)
4 oz. feta cheese
2 Tbsp. olive oil
  Dash crushed read pepper flakes (optional)
6 - 8 cups blueberries or blackberries
1/3 cup fresh mint leaves, large leaves torn
2 Tbsp. sugar
2 tsp. finely shredded lemon peel
1 Tbsp olive oil

1.  Prepare Quick Pickled Onions.
2.  Meanwhile, for creamy feta, in a food processor combine feta cheese, the 2 tablespoons olive oil, and red pepper flakes.  Process until smooth.
3.  In a large bowl gently toss blueberries, mint, sugar, lemon peel, and drained Quick Pickled Onions.  Arrange on a serving platter.  Serve with creamy feta; drizle olive oil.
Makes 12 servings.

Quick Pickled Onions

Thinly sliver 1 small or half a large read oinion.  In a bowl, toss onion, 3 tablesoons cider vinegar, 1 teasoon sugar, 1/2 teaspoon mustard seeds, and 1/4 teaspoon salt.  Cover; let stand at room temperatrue for 1 - 4 hours, stirring occsionally.
