Food Inc. - An Alternate View
For resources presenting an alternate view to the movie "Food Inc", Agriculture in the Classroom Manitoba has put out a list of resources you and your students can access. It's a really good resource for class debates in the grade 10 geography Food From the Land cluster.

Ponnukokur Recipe
I'm lucky enough to have a ponnukokur pan from Iceland, but apparently you can make these on other fry pans. :)
Ponnukokur (Icelandic Pancakes)
2 eggs
1/3 cup granulated sugar (sorry, Gary!)
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla
1/2 tsp baking soda
1 cup whipping cream
1 1/2 cups milk
1 1/2 cups flour
1 tsp baking powder
Beat eggs. Add sugar, salt, vanilla and cinnamon. In a separate bowl, combine milk and whipping cream. Dissolve baking soda in a little bit of boiling water and add to milk. Sift flour and baking powder together and add to egg mixture alternately with milk. Stir well!
To fry, use a fairly heavy griddle pan. Rub bottom of pan with butter tied in a small cloth. Lift the pan while you pour about 1/4 cup of batter. Tip the pan around to spread batter out thinly. Set back on heat as quickly as possible. Turn and fry on other side. Sprinkle with brown sugar and stack. When you are done frying, sprinkle a bit more brown sugar on each ponnukokur and roll up separately. Cut in half and serve.

UNDERSTANDING CANADA’S INDIGENOUS PEOPLES
The first—and most important—step towards understanding the Canadian Indigenous history is to recognize that Indigenous people are strong people. In spite of the severity of the many issues that individuals, families and communities face, Indigenous peoples are demonstrating their resiliency and remergence to equal standing within the Canadian society.
The shared history between Indigenous peoples and European settlers is one of cultural disruption and missed opportunities. Generations of Indigenous peoples experienced profound, unsought and irreversible changes in their cultural and family life as a result of colonization. Many Indigenous people are working to change the cycles of abuse, the social and economic disruption, the loss of languages and the assimilation and lost of their cultures and identity.
Aboriginal people are building bridges of reconciliation and working to create educational communities where their children are respected and their cultures are reflected and appreciated in Canadian society. They are rebuilding their Aboriginal cultures and hope to right the relations of the past. However, many challenges still exist today. Education is a key to this positive change.

Raw Brownie recipe
Brownie:
2 cups walnuts or pecans
13 oz pitted baking dates
1/8 tsp. coarse sea salt
1/8 tsp. orange zest
2 tsp. vanilla extract
1 avocado, pitted and peeled
½ cup of raw cocoa powder
Frosting:
3 avocados, pitted and peeled
1/8 tsp. coarse sea salt
½ cup raw cocoa powder
½ cup raw agave nectar, plus more to taste
In
food processor, mix all base ingredients, then pat down in an 8-inch square
baking pan. Puree all frosting ingredients in a food processor and spread on
base. Cover and freeze at least 3 hours. Cut into 2-inch squares and serve
cold.

I received this email from Habitat for Humanity today and they are looking for volunteers this Saturday. If you haven't done a Blitz Build for Habitat before it's lots of fun!!

As you likely know we are in the middle of our Blitz Build event.
Unfortunately today we have had a large group cancellation for the build on Saturday 13th July. This means that we urgently need fifteen willing construction volunteers to sign-up for House 214 on July 13th. I have updated the Volunteer Hub to allow you to self book at this link:

How to Foster Empathy in Your Classroom - Strong Ideas
- Building connections through a living library... have staff and students share their stories
- Sharing circle- have two buckets (1 empty, 1 full); if something positive happens to you, you fill the bucket; bucket dippers are people who try to empty your bucket
- Storytelling--> guest speakers, reading stories, telling your story i.e. have a newcomer come in to tell their story
- Have students create their own stories (something they have struggled with); it acknowledges their struggles... move toward some sort of action
- Volunteer exchange programs- initiated by students
- Students having pen pals in developing countries
- Skyping with another class; sharing stories, talk about classroom and family

Angie - Blackberry Salad with Creamy Feta
Here is the recipe for a blueberry salad that I am bringing for snack tomorrow.
Thought I would send it to you so you could post it - allergies and if people want to make it again!
Blueberry (Blackberry) Salad With Creamy Feta
1 recipe for Quick Pickled Onions (below)
4 oz. feta cheese
2 Tbsp. olive oil
Dash crushed read pepper flakes (optional)
6 - 8 cups blueberries or blackberries
1/3 cup fresh mint leaves, large leaves torn
2 Tbsp. sugar
2 tsp. finely shredded lemon peel
1 Tbsp olive oil
1. Prepare Quick Pickled Onions.
2. Meanwhile, for creamy feta, in a food processor combine feta cheese, the 2 tablespoons olive oil, and red pepper flakes. Process until smooth.
3. In a large bowl gently toss blueberries, mint, sugar, lemon peel, and drained Quick Pickled Onions. Arrange on a serving platter. Serve with creamy feta; drizle olive oil.
Makes 12 servings.
Quick Pickled Onions
Thinly sliver 1 small or half a large read oinion. In a bowl, toss onion, 3 tablesoons cider vinegar, 1 teasoon sugar, 1/2 teaspoon mustard seeds, and 1/4 teaspoon salt. Cover; let stand at room temperatrue for 1 - 4 hours, stirring occsionally.

Documentary Link on Climate Change
Hey Folks,
Mike said that we could post interesting links on here that we might find useful in our classes. Some of you may have already seen the documentary "Chasing Ice" but if you haven't, or even if you have, please take a look at this link to a TED Talk from the creator of the documentary, James Balog.
What interests me most about this documentary is that we so often get caught up about talking about the science behind Climate Change but we can't necessarily 'see it' happening. This I find is especially true of our students. With this film, James Balog sought to show us using time lapse cameras focused on some of the world's largest glacial areas.
